Wash apples and grate them dry. Coarsely chop the pistachios. Cut a lid off the apples. Hollow out apples with a ball cutter so that only a narrow edge remains. Drizzle apples with lemon juice
mix rice pudding, half cinnamon and pistachios, fill into the apples
Place apples in an ovenproof dish and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-40 minutes. Put the apple lids into the pan halfway through the cooking time. Arrange baked apples on plates. Sprinkle with remaining pistachios, dust with cinnamon and serve warm
