Avocado steak salad with sprouts

Ingredients

Servings: 4
  • 4 TABLESPOONS Wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Honey
  • 6 TABLESPOONS Sunflower oil
  • 1 Shallot
  • 25 g fresh ginger
  • 60 g Radishes
  • 150 g Lamb's lettuce
  • 4 (approx. 180 g) Rump steaks
  • 6 discs Wholemeal bread
  • 2 TABLESPOONS Butter
  • 2 ripe avocados
  • 30 g Luzerne et pousses de radis

Directions

    For the vinaigrette, whisk vinegar, salt, pepper and honey together. Add 4 tablespoons of oil drop by drop. Peel the shallot, cut into fine cubes and stir into the vinaigrette. Peel ginger and cut into fine strips.

    Clean, wash and slice the radishes. Clean, wash and spin-dry lettuce. Wash the meat, dab dry and season with salt. Heat 2 tablespoons of oil in a frying pan. Fry steaks for 3 minutes on each side.

    Season with pepper. Leave the meat to rest. Cut slices of bread in half. Heat the butter in the pan and fry the slices of bread in portions for about 3 minutes while turning them until crispy. Halve the avocados and remove the seeds.

    Peel and chop the fruit halves. Cut the meat into slices. Arrange bread and salad ingredients and sprinkle with the vinaigrette. Sprinkle with sprouts.
