Asparagus gourmet pan

Ingredients

Servings: 4
  • 1.5 kg Asparagus (approx. 32 stems)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 20 g Butter
  • 2 TABLESPOONS Flour
  • 250 ml Vegetable broth (instant)
  • 200 g Whipped cream
  • 150 g medieval Gouda cheese
  • 7-10 Tbsp Pepper
  • 8 discs (25 g each) cooked ham
  • 7-10 Tbsp Chives

Directions

    Wash and peel the asparagus and cut off the woody ends. Boil 2 litres of water with salt and sugar in a pot. Cook the asparagus for about 8 minutes until al dente. In the meantime melt butter.

    Sweat flour in it. Add the stock and cream, stirring constantly, and simmer gently for about 4 minutes. Grate cheese and melt approx. 75 g in the sauce. Season to taste with salt and pepper. Remove the asparagus and rinse in cold water.

    Divide the asparagus into 8 packets with about 4 sticks each and wrap each with 1 slice of ham. Put the asparagus in 4 small ovenproof pans or 1 large dish and pour hot cheese sauce over them. Sprinkle the rest of the grated cheese on top and grill under the oven for about 5 minutes until golden brown.

    Remove the pans and garnish with chive rings.
