Ingredients

Servings: 4
  • 1 collar Radishes
  • 1 collar Spring onions
  • 400 g Shiitake mushrooms
  • 10 g Ginger
  • 1/2 Pot of coriander
  • 2 Rump steaks (approx. 300 g each)
  • 7-10 Tbsp Salt
  • 3 TABLESPOONS Sunflower oil
  • 150 ml Poultry broth
  • 100 ml Soy sauce
  • 4 TABLESPOONS Mirin
  • 2 TABLESPOONS Miso paste
  • 400 g Soba noodles
  • 1 TABLESPOON Sesame seed
  • 7-10 Tbsp Aluminium foil

Directions

    Wash, clean and slice the radishes. Clean, wash and slice spring onions. Clean the mushrooms and cut them into halves or quarters depending on size. Peel ginger thinly and grate finely. Wash coriander, shake dry

    Dab meat dry and season with salt. Heat a large pan. Add 2 tablespoons of oil and fry the meat for about 4 minutes while turning. Remove and wrap in foil to keep warm

    Add 1 tablespoon of oil to the frying fat and fry the mushrooms for about 5 minutes, turning them over. Deglaze with stock, soy sauce and mirin. Bring to the boil and simmer for about 2/3. Stir in miso paste

    Meanwhile, prepare the pasta in boiling salted water according to the instructions on the packet. Cut meat into thin slices. Add the noodles, meat, radishes, spring onions and sesame seeds to the pan and turn in the sauce. Arrange and sprinkle with coriander
