Rump steak on soba noodles with miso dressing

Ingredients

  • 1 piece(s) (approx. 2 cm) fresh ginger root
  • 200 ml Poultry stock
  • 2 TABLESPOONS red miso paste
  • 100 ml Soy sauce
  • 4 TABLESPOONS Mirin
  • 2 TABLESPOONS demerara sugar
  • 700 g Rump steak
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Oil
  • 250 g Soba noodles
  • 150 g Shiitake mushrooms
  • 2 TEASPOONS Sesame seed
  • 2 TABLESPOONS Sesame Oil
  • 1 collar Spring onions
  • 100 g Radish
  • 1 collar Radishes
  • 7-10 Tbsp Coriander

Directions

    Peel and finely grate the ginger. Mix chicken stock, miso paste, soy sauce and mirin with ginger and sugar. Season meat with salt and pepper. Heat oil in a grill pan and fry meat for 2-3 minutes on each side.

    Remove and place in a flat dish, pour the marinade over it and set aside.

    Cook the pasta in boiling water according to the instructions on the packet. Pour into a sieve, quench cold and drain. Clean and clean the mushrooms and cut them into slices. Roast sesame seeds in a pan without fat, remove.

    Heat sesame oil, fry mushrooms for 1-2 minutes while turning, remove.

    Clean and wash spring onions and cut into fine rings. Clean and peel the radish and cut into thin strips. Radishes, clean, wash and cut into fine sticks. Mix noodles, mushrooms, radish, radishes and spring onions in a bowl.

    Remove meat from the marinade and cut into thin slices. Add the marinade to the pasta mixture and mix everything well. Season to taste again if necessary. Serve the noodle salad with the meat. Sprinkle with sesame and coriander.
