Asian noodles with fried egg

Ingredients

  • 7-10 Tbsp salt, white pepper
  • 250 g Mung bean sprouts
  • 250 g Spaghettini or
  • 7-10 Tbsp Spaghetti
  • 1 g bunch of spring onions
  • 1 (200 g) red pepper
  • 250 g Chinese cabbage
  • 3 TABLESPOONS Oil (e.g. soybean oil)
  • 1 knife tip Sambal Oelek
  • 1-2 TABLESPOONS Soy sauce
  • 4-6 Tbsp Asia spice sauce
  • 7-10 Tbsp sweet-sour
  • 4 Eggs

Directions

    Boil up about 2 l salted water in a wide pot. Select the bean sprouts, wash and drain. Cook the noodles in boiling salted water for about 8 minutes

    In the meantime, clean and wash the spring onions, peppers and Chinese cabbage. Cut spring onions into rings, peppers and cabbage into strips. Drain noodles well

    Heat 2 tablespoons of oil in a wok or large frying pan. Fry the noodles. Add vegetables. Fry everything while turning for about 5 minutes. Season with sambal, soy and Asian sauce

    In the meantime heat 1 tablespoon of oil in a frying pan. Beat the eggs and fry until golden brown. Turn, fry for 2 more minutes. Season and lay in wide strips on the noodles
