Apple-Vanilla Cake

Ingredients

  • 500 g Flour
  • 1 egg (size M)
  • 1 pinch Salt
  • 50 g Sugar
  • 1 package Vanillin sugar
  • 1 cube (42 g) fresh yeast
  • 50 g Butter or margarine
  • 1/4 l Milk
  • 2 kg sour apples (e.g. Boskop)
  • 7-10 Tbsp juice and grated zest of 1 untreated lemon
  • 200 g Sugar
  • 100 ml apple juice
  • 1/2 Cinnamon stick
  • 1 package Pudding powder "Vanilla Flavor"
  • 1/2 l Milk
  • 60 g Almond slivers
  • 25 g Butter or margarine
  • 7-10 Tbsp Flour

Directions

    Put flour, egg, salt, sugar and vanilla sugar in a bowl. Crumble yeast over it. Melt the fat, add cold milk and add the lukewarm milk-fat mixture to the flour. Knead with the dough hooks of the hand mixer to a smooth yeast dough, cover and leave to rise in a warm place for 30 to 40 minutes.

    Wash, peel and quarter the apples and cut out the core. Cut apple quarters into thin slices and sprinkle with lemon juice. Bring apples, 125 grams of sugar, lemon juice, apple juice and cinnamon stick to the boil and steam for five to ten minutes.

    Remove the cinnamon stick and let the apple compote cool down a little. In the meantime knead the yeast dough and cut it in half. Roll out both halves thinly on a floured work surface in the size of the fat pan of the oven (approx. 32x39 cm).

    Line the fat pan with one half, spread lukewarm apple compote on top and cover with the remaining yeast dough. Leave to rise for another ten to 15 minutes. Stir pudding powder, two tablespoons of milk and two tablespoons of sugar until smooth.

    Bring the remaining milk to the boil, stir in the pudding powder and bring to the boil again briefly. Let it cool down a bit. Press depressions with your fingers and add the pudding. Sprinkle cake with almond slivers and remaining sugar.

    Spread fat in flakes on top of it. Bake in the preheated oven (electric oven: 200°C/ gas: level 3) for 25 minutes. Serve with whipped cream.
