Apple Strudel Muffins

Ingredients

  • 260 g Flour
  • 7-10 Tbsp 0.5 tsp sodium bicarbonate
  • 2 TEASPOONS Baking Powder
  • 200 g Chocolate Raisins
  • 1 TEASPOON Cinnamon
  • 1 pcs. Egg
  • 75 ml Oil
  • 120 g Crystal sugar
  • 240 g Buttermilk
  • 200 g Applesauce
  • 1 TEASPOON Vanilla Aroma
  • 1 TEASPOON Lemon juice

Directions

    Preheat oven to 180°C, either equip muffin tray with paper cups or grease.

    In a bowl, mix the dry ingredients, i.e. flour, baking soda, baking powder, cinnamon and chocolate raisins. In another bowl, break the egg and whisk. Then add oil, granulated sugar, buttermilk, vanilla flavouring, lemon juice and about 170 g of applesauce.

    Now add the dry ingredients and mix everything briefly.

    Put one tbsp. of batter into each muffin tin, then add about 2 tsp. of applesauce and fill the tins with the batter. Bake at 180°C on the middle shelf for 20-25 minutes, sprinkle the finished muffins with cocoa if necessary.
