Apple mousse with mint

Ingredients

  • 50 g Milk yoghurt vanilla
  • 25 g Skimmed milk yoghurt
  • 1 leaf Gelatine
  • 75 g Applesauce
  • 1 TEASPOON Calvados
  • 1 (approx. 15 g; red cheeks) Apple Crack
  • 1 TEASPOON flaked almonds
  • 7-10 Tbsp Mint

Directions

    Stir vanilla yoghurt and yoghurt together until smooth. Soak gelatine in cold water. Heat 25 g applesauce and Calvados in a pot, dissolve gelatine in it. Mix the yoghurt with half of the dissolved gelatine and stir the other half into the applesauce. Chill the yoghurt and applesauce until the masses start to gel.

    In the meantime, core the apple and cut into cubes. Roast the flaked almonds in a pan without fat, remove. Mix both masses and the apple cubes in streaks and pour into a glass. Chill the mousse for 20-30 minutes. Decorate with mint and flaked almonds
