Large potato rösti with tomato and feta cheese

Ingredients

Servings: 4
  • 2 Spring onions
  • 600 g large potatoes (mainly waxy)
  • 40-0 g Butter or margarine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Egg
  • 7-10 Tbsp grated nutmeg
  • 3 Tomatoes
  • 150 g Sheep's cheese
  • 1/2 TEASPOON dried thyme
  • 3 Stem(s) Parsley

    Clean and wash spring onions and cut into fine rings. Peel, wash and roughly grate the potatoes. Dab with kitchen paper. Heat the fat in a large coated pan and fry the grated potatoes for about 5 minutes, turning them over. Season with salt and pepper, mix in spring onions and push together to a pancake. Whisk the egg with a little salt, pepper and nutmeg and spread over the Rösti. Fry over medium heat for 5 minutes.

    In the meantime wash the tomatoes, remove the stalk and cut the tomato into slices. Cut the feta cheese into slices as well. Carefully turn the Rösti over and top with the tomatoes and feta cheese. Sprinkle with thyme and pepper and fry covered for another 5 minutes. Wash the parsley, dab dry and chop. Serve Rösti sprinkled with parsley
