Ingredients

  • 2 kg Apples
  • 2 packages Pudding powder "Vanilla Flavor"
  • 700 ml clear apple juice
  • 225 g Sugar
  • 2 TABLESPOONS Lemon juice
  • 200 g Raisins
  • 100 g Almond slivers
  • 500 g Low-fat curd
  • 1 egg (size M)
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 8 TABLESPOONS Milk
  • 8 TABLESPOONS Oil
  • 500 g Flour
  • 1 package Baking Powder
  • 1 Egg yolk (size M)
  • 1 TABLESPOON Whipped cream
  • 7-10 Tbsp Grease
  • 7-10 Tbsp roasted almond slivers

Directions

    Peel, quarter, core and finely dice apples. Mix pudding powder, 100 ml apple juice and 100 g sugar. Bring the rest of the apple juice and lemon juice to the boil, stir in the pudding powder, bring to the boil again while stirring continuously.

    Remove from the heat and stir in the apple cubes, raisins and almond slivers. Leave to cool. Mix curd, egg, salt, vanilla sugar, milk, oil and remaining sugar well with the dough hooks of the hand mixer.

    Mix flour and baking powder, add and knead well. Put 2/3 of the dough on a well greased fat pan and roll out. Pull up the edge of the dough about 1 cm. Bake in the preheated oven (electric: 175 °C/ gas: level 2) for about 12 minutes.

    Remove from the oven and spread stewed apple evenly on top. Roll out remaining dough to a square (30x30 cm) and cut into three strips. Roll over each of them with a grating cutter (dip in flour beforehand).

    Carefully pull something apart. Place a grid on the compote and bake the cake at the same temperature for another 25 minutes. In the meantime whisk the egg yolk and cream and spread the grid with it halfway through the baking time.

    Take the cake out of the oven and let it cool down on a grid. Sprinkle the cake with roasted almond slivers as desired. Whipped cream tastes good with it. Makes about 20 pieces.
