Peel or thoroughly wash apples as desired. Quarter apples, cut out core, cut flesh into pieces. Mix with lemon juice. Simmer the apple pieces and 450 ml apple juice for about 7 minutes.
Season with cinnamon. Mix pudding powder, sugar and remaining apple juice until smooth and stir into the apples. Bring to the boil briefly, pour into glasses in portions and let cool. Serve decorated with meringue, mint leaves and skewered apple wedge
