Rinse and drain the raisins. Roast the almonds in a pan without fat, take them out. Peel and quarter apples and remove the core. Cut quarter into small pieces. Caramelize sugar in a pot.
Deglaze with wine and add apples. Simmer covered for about 10 minutes (depends on the type of apple). Add almonds and raisins and season compote with some cinnamon. Pour into a bowl and let cool off
