Apple-coconut pancakes

Ingredients

Servings: 1
  • 1/8 l Milk
  • 1 Egg
  • 1 pinch Salt
  • 50 g Flour
  • 2 sour apples (approx. 100 g each)
  • 1 TABLESPOON Lemon juice
  • 2 TEASPOONS Oil
  • 50 g Coconut chips
  • 7-10 Tbsp Cinnamon and icing sugar
  • 7-10 Tbsp Melissa

Directions

    Milk, egg and salt. Stir in flour and leave to swell for 10-15 minutes. In the meantime wash apples, cut out cores. Cut apples into thin slices and sprinkle with lemon juice. Brush a coated pan with oil, heat it up and pour in half the dough. Spread half of the apple rings on top and bake the pancakes on each side for 3-4 minutes. Do the same with the remaining dough and apple rings for the second pancake. Sprinkle with coconut chips and dust with cinnamon and icing sugar. Garnish with lemon balm as desired
