Peel the kiwis and cut into small cubes. Mix 1 tablespoon maple syrup, lemon juice and kiwi cubes. Melt the fat and let it cool down. Mix eggs, sugar and salt with the whisk of the hand mixer until creamy.
Stir in fat and milk. Mix flour and baking powder and stir in. Heat the clarified butter in portions in a large coated pan. With a small ladle or a tablespoon, add 3-4 scoops each.
Bake at medium heat from each side until golden brown. Remove from the pan and keep warm. Process remaining dough in the same way. Makes about 12 pancakes. Arrange pancakes and kiwi salad. Decorate pancakes with coconut chips and sprinkle with the remaining maple syrup.
