Apple-blackberry jelly with vanilla

Ingredients

  • 250 g Blackberries
  • 600 ml clear apple juice, unsweetened
  • 2-3 (approx. 250 g) Apples
  • 1 kg Gelling sugar (1:1)
  • 1/2 TEASPOON liquid vanilla flavouring

Directions

    Sort and wash the blackberries. Cook apple juice and blackberries for 5-6 minutes. Hang a fine sieve over a large pot. Pour blackberry mixture into the sieve and pass it through with a spoon. Results in about 700 ml fruit juice. Leave to cool down a little. Peel, halve and core apples. Dice apples. Weigh 200 g fruit flesh. Add apples and jam sugar to the apple-blackberry juice. Mix everything well. Bring to the boil over high heat while stirring. Then boil for at least 4 minutes stirring continuously until bubbly through and through. Add vanilla flavour. Fill jelly immediately into prepared clean twist-off glasses and close them. Let cool upside down
