Chops on bean vegetables

Ingredients

  • 750 g green beans
  • 7-10 Tbsp Salt
  • 4 Pork chops (about 200 g each)
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Cayenne pepper
  • 1/4 l Milk
  • 1 pack of Mashed potatoes (4 portions)
  • 1 Egg Yolk
  • 75 g streaky smoked bacon
  • 2 Onions
  • 1/2 bunch flat leaf parsley

Directions

    Clean, wash and cut the beans into small pieces. Cook in boiling salted water for about 10 minutes and drain. Wash chops and dab dry. Fry them on both sides in hot oil. Season with salt and cayenne pepper.

    Fry over medium heat for about 12 minutes. Meanwhile boil 1/2 litre water and 1 teaspoon salt. Remove the pot from the heat and add milk. Stir in puree flakes. Pour the puree into a piping bag with a star-shaped spout and squirt onto a baking tray lined with baking paper. Brush with whisked egg yolk and bake under the hot grill for about 2 minutes just before serving. Finely dice the bacon. Peel and chop the onions. Wash parsley and chop except for a few leaves for garnishing. Remove chops from the pan and keep warm.
