Apple-bacon pancakes with maple syrup

Ingredients

  • 4 Eggs (size M)
  • 1 pinch Salt
  • 200 g Flour
  • 1/2 TEASPOON Sugar
  • 200 ml Milk
  • 2 Apples (approx. 130 g each)
  • 20 g clarified butter
  • 8 discs Bacon
  • 8 TABLESPOONS Maple syrup

Directions

    Separate 3 eggs. Place 1 egg, egg yolks, salt, flour, sugar and milk in a bowl and mix to a smooth dough with the whisks of the hand mixer. Leave to swell for about 15 minutes. Wash the apples, cut out the core with an apple cutter. Cut apples into 6-7 rings. Beat egg white until stiff and fold into the dough in 3 portions.

    Heat 5 g clarified butter in a small pan (16 cm Ø), put 2 slices of bacon and 3-4 apple slices in the pan, spread about 1/4 of the dough evenly on top. Fry for 2-3 minutes at low heat until golden brown, slide on a lid and turn with the help of the lid. Bake from the second side also until golden brown. Remove from the pan and keep warm. Bake another 3 pancakes from the remaining ingredients in the same way. Serve pancakes with maple syrup
