Place the sauerkraut in a sieve, rinse thoroughly with cold water and drain. For the marinade, mix apple syrup, vinegar and oil and season to taste with a little salt. Peel onion and cut into thin slices.
Cut the core out of the apple halves, cut apples into slices. Cut turkey cold cuts in half. Wash parsley, dab dry and cut the leaves of 1 stalk into strips. Mix parsley strips, onion slices, sauerkraut, apple slices, turkey breast and marinade.
Season salad with salt, pepper and sugar and arrange in a bowl. Garnish with 1 parsley stalk. Serve with bread.
