Apple and pear groats with vanilla curd

Ingredients

Servings: 4
  • 2 small pears
  • 2 big
  • 7-10 Tbsp sour apples
  • 1/4 l apple juice
  • 2-4 Tbsp Sugar
  • 1/2 package Pudding powder vanilla
  • 1 Vanilla pod
  • 250 g Edible quark (20 % fat)
  • 150 g Whipped cream

Directions

    Peel, core and dice pears and apples. Boil up with apple juice and 1-2 tbsp. sugar. Cover and simmer for 5-7 minutes.

    Stir pudding powder and 3 tablespoons of water until smooth. Stir the mixed powder into the fruit and simmer for about 1 minute. Let the groats cool down.

    Cut the vanilla pod lengthwise. Scratch out the pith. Mix with quark and 1-2 tablespoons sugar until smooth. Cut the pod lengthwise into fine strips for decoration. Whip cream until stiff and fold into the quark.

    Layer with groats alternately in 4 glasses. Decorate with vanilla pod.
