Wash apples and pears, peel as desired. Quarter fruits, remove seeds and cut into slices. Boil up lemon and apple juice. Season with vanilla pulp and sugar. Steam the fruits for 5-7 minutes, let them cool down a bit.
Stir the quark, milk and vanillin sugar until smooth. Arrange the compote with 1 blob of quark each. Sprinkle with cinnamon and serve decorated with mint.
