Clean, wash and roughly grate the carrots. Wash and halve apples, cut out core, hollow out apple halves to 1/2 cm wide edge. Cut the flesh finely. Cut ham into cubes. Mix carrots, apple pieces and ham.
Mix lemon juice, sugar, salt and pepper and pour over the salad. Season salad cream with salt and pepper. Fill the apple-carrot salad into the apple halves, add a dollop of salad cream and sprinkle with coloured pepper. Arrange two apple halves each on salad leaves. Serve with wholemeal bread coated with butter and sprinkled with cress
