Amaranth hot rinse. Bring amaranth, almond drink and coconut milk to the boil and simmer at lowest heat for 25-30 minutes while stirring gently. Afterwards let it swell again for about 10 minutes.
Wash and quarter apples, remove core and cut quarters into cubes. Roughly chop the walnuts. Heat coconut oil in a frying pan, lightly roast walnuts in it. Add apples and sprinkle with 1/2 tbsp. cinnamon and sugar, allow to caramelize slightly.
Arrange the porridge in bowls, spread apple and walnut mixture on top and sprinkle with the remaining cinnamon.
