Almost like holiday pasta with chorizo and vino

Ingredients

  • 250 g Chorizo (Spanish pepper salami)
  • 1 collar Spring onions
  • 1 Garlic clove
  • 400 g Noodles (e.g. ribbon noodles)
  • 7-10 Tbsp Salt
  • 1 TABLESPOON Olive oil
  • 1 TABLESPOON Flour
  • 100 ml dry red wine
  • 1 can(s) (850 ml) chunky tomatoes
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 100 g creamy feta

    Cut the chorizo into slices. Clean and wash spring onions and cut into fine rings. Peel garlic and chop finely. Cook pasta in 3-4 l boiling salted water (1 teaspoon salt per litre) according to package instructions.

    Heat the oil in a large frying pan. Fry the chorizo for about 5 minutes while turning. Remove. Sauté the spring onions and garlic in the frying fat for about 2 minutes. Dust with flour and sauté for about 1 minute, stirring constantly.

    Douse with red wine. Add the tomatoes. Bring to the boil and simmer for about 8 minutes, stirring continuously. Season to taste with salt, pepper and 1-2 teaspoons sugar.

    Coarsely crumble feta. Pour the pasta into a sieve, drain and put it back into the pot. Warm the sausage in the sauce. Fold the sauce under the noodles. Arrange un
