Ingredients

Servings: 4
  • 50 g Butter or margarine
  • 50 g Sugar
  • 2 Eggs
  • 50 g ground almonds
  • 7-10 Tbsp grated rind of 1/2 untreated lemon
  • 1 TABLESPOON Rum
  • 2 TABLESPOONS Whipped cream
  • 250 g Flour
  • 1 TEASPOON Baking Powder
  • 1 kg white vegetable fat for frying
  • 50 g Icing sugar

Directions

    Cream soft fat and sugar. Add eggs, almonds, lemon peel, rum and cream. Sift the flour and stir in 2/3 of it by the spoonful. Mix the rest with the baking powder and knead in.

    Chill the dough for about 20 minutes. Roll out on a floured baking board about 1 cm thick and cut into drop-shaped cookies with almond shapes (available in stores). Heat the cooking fat in a high pan or deep fryer to 175 ° C and fry the almonds in portions. Drain and dust with icing sugar
