Peel the garlic and press it through a garlic press. Salt the egg yolk a little bit and stir it with the whisk of the hand mixer until foamy. Add the oil first drop by drop, then also in larger quantities, stirring constantly. Stir in mustard and garlic. Season with salt, pepper and vinegar. Cover and leave to stand for at least 1/2 hour.
