After-work grated bread with tomatoes

Ingredients

  • 150 g cherry tomatoes
  • 3 Stem(s) flat leaf parsley
  • 8 Eggs (Gr. M)
  • 75 ml Milk
  • 7-10 Tbsp salt, pepper
  • 1 TABLESPOON Butter
  • 8 discs Mixed Wheat Bread

Directions

    Wash and quarter the tomatoes. Wash parsley, shake dry and pluck off leaves. Whisk eggs and milk. Season with salt.

    Heat butter in a large coated pan. Pour in the egg mixture and let it set, pushing it together occasionally. Finally add tomatoes and fry briefly. Spread the tomato mixture on the bread slices and sprinkle with parsley and pepper.
