Acai berry coconut cream

Ingredients

Servings: 2
  • 1⁄2 Banana
  • 1 small ripe avocado
  • 1 fresh dates (alternatively: 1 handful of pitted soft dates)
  • 2 TABLESPOONS Açai berry powder
  • 2 TABLESPOONS Coconut oil
  • 150 g frozen berries
  • 200 ml Coconut water or water

Directions

    Cut the banana into slices, place in a freezer bag and freeze overnight.

    The next morning cut 1 small ripe avocado in half, stone it and remove the flesh. Stone and roughly chop 1 fresh date. Place banana, avocado and date with açaí berry powder, coconut oil, frozen berries and coconut water or water in a tall mixing bowl and blend until smooth with a hand blender.

    Topping tip: flax or chia seeds, fresh banana slices, berries or seasonal fruit or even fine cocoa chips. There is something for everyone!
