Zucchini pasta (zoodles) with cherry tomatoes and pesto

Ingredients

Servings: 4
  • 1 Pot of basil
  • 1 small clove of garlic
  • 50 g Parmesan cheese
  • 75 ml Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 600 g Courgette
  • 150 g red and yellow cherry tomatoes

Directions

    Wash the basil, shake dry and pluck the leaves from the stalks. Peel garlic and chop roughly. Grate the parmesan. Finely puree about 50 g basil leaves, parmesan, garlic and olive oil.

    Season to taste with salt and pepper.

    Wash and clean the zucchini and cut them into long strips with a spiral slicer. Wash and halve the tomatoes. Mix the zucchini noodles and pesto carefully and season again. Mix in tomato halves and arrange on a plate.

    Garnish with basil.
