Ingredients

  • 500 g Whole milk yoghurt
  • 1 TABLESPOON Sugar
  • 1 cube (42 g) fresh yeast
  • 300 g dark rye flour (type 1150)
  • 300 g Wheat flour (type 550)
  • 2 TABLESPOONS dried Italian herbs
  • 1 (15 g) Painted tablespoon salt
  • 1 TABLESPOON Olive oil
  • 2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Warm the yoghurt, sugar and 100 ml water lukewarm. Crumble yeast into it and dissolve it. Mix both flours, herbs and salt. Add oil, vinegar and yoghurt mixture and immediately knead into a smooth dough with the dough hooks of the hand mixer for about 4 minutes. Cover the dough and let it rise in a warm place for about 30 minutes. Place the dough on a well floured work surface. Knead again with floured hands. Halve the dough. Form a roll from each half of the dough (approx. 25 cm long). Twist 1 roll against each other from both ends, dust with flour. Place on a baking tray lined with baking paper. Divide the other roll into 6 pieces. Pull 3 pieces apart a little more to form longish rolls (approx. 12 cm long). Form the other 3 pieces of dough into round rolls (approx. 7 cm Ø). Put them on the baking tray. Cut the rolls with a sharp knife and dust with flour. Let rest for 15 minutes in a warm place. Bake in the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) for about 10 minutes. Then reduce the heat (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) and bake the rolls for another 10-15 minutes, the baguette bread for 15-20 minutes. Let it cool down

    Tip: you can also bake a large loaf of bread from the dough. The baking time is then a total of 45-50 minutes
