For the salad, remove the sausages from the skin and cut into slices. Heat 1 tablespoon of oil in a large frying pan. Fry the sausage slices in it. Let cool down briefly.
Peel the radish and the ring beds and slice into thin slices. Wash cucumber and cut into cubes. Peel and finely dice onion. Wash chives and parsley and chop finely.
Whisk vinegar, mustard, salt, pepper and 4 tablespoons of oil. Mix the sausage, radish, ring beets, cucumber, onion and herbs with the vinaigrette. Season to taste with salt and pepper. Arrange everything.
