White bean vegetables with fried egg

Ingredients

Servings: 4
  • 2 medium-sized onions
  • 1-2 Garlic cloves
  • 3 can(s) (425 ml each) large white beans
  • 4 medium-sized tomatoes
  • 2-3 TABLESPOONS Oil
  • 1 coated Tsp Vegetable broth (instant)
  • 8 discs Bacon
  • 4 Eggs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp some parsley

Directions

    Peel the onions. Dice 1, cut 1 into rings. Peel and chop the garlic. Rinse beans, drain. Wash, clean and slice the tomatoes

    Heat 1-2 tablespoons of oil. Sauté the onion cubes in it. Add the beans, tomatoes and garlic and fry for 3-4 minutes, turning. Add 175 ml water. Bring to the boil and stir in stock. Let everything simmer at low heat for about 7 minutes

    Heat 1 tablespoon of oil in a large frying pan. Fry the bacon and onion rings in it until crispy brown. Remove and keep warm. Beat the eggs in the pan and fry them until they are fried. Season with salt and pepper

    Season the bean vegetables to taste and possibly crush them coarsely. Distribute on plates. Arrange fried eggs on top and sprinkle with bacon and onion rings. Garnish with parsley if desired.
