Weißwurst-Spätzle salad with mustard vinaigrette

  • 800 g fresh spaetzle
  • 7-10 Tbsp Salt
  • 4 White sausages
  • 9 TABLESPOONS Oil
  • 5 TABLESPOONS Fruit vinegar
  • 1 TEASPOON Medium hot mustard
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1/2 bunch Radishes
  • 5 Stem(s) Parsley
  • 1/2 bunch Spring onions
  • 1/2 white radish

Directions

    Prepare spaetzle in boiling salted water according to package instructions, drain and rinse with cold water. Place the white sausage in boiling water, pull the pot aside and let it stand for about 8 minutes. Mix 8 tablespoons of oil, vinegar, 2 tablespoons of water and mustard with a hand blender and season to taste with salt, pepper and sugar. Add half of the vinaigrette to the spaetzle and mix. Peel the white sausage and cut into slices. Heat 1 tablespoon of oil in the pan. Fry the sausage slices on both sides for about 2 minutes and add to the spaetzle.

    Clean, wash and quarter the radishes. Wash parsley, dab dry and chop coarsely. Wash spring onions and cut into thin rings. Wash and peel the radish and cut spirals with a radish slicer. Add parsley and radishes to the spaetzle and mix everything and season again with salt and pepper. Arrange salad in bowls and garnish with radish spirals
