Tortellini salad with rocket

Ingredients

  • 500 g dried tortellini
  • 7-10 Tbsp salt, black pepper
  • 2 medium-sized onions
  • 6 TABLESPOONS Oil, 2 teaspoons medium. Mustard
  • 1/8 l White wine vinegar
  • 1 TEASPOON vegetable broth, sugar
  • 1 can(s) (425 ml) big
  • 7-10 Tbsp white beans
  • 400 g cherry tomatoes
  • 1 collar Spring onions
  • 125 g Rocket salad (rocket)
  • 7-10 Tbsp Parmesan

Directions

    Cook the tortellini in boiling salted water for 16-18 minutes. Drain. Peel and finely dice onions. Steam in hot oil. Mustard with sweat on. Deglaze with 1/8 l water and vinegar, bring to the boil. Stir in broth. Seasoning

    Rinse the beans and let them drain. Wash and quarter the tomatoes. Clean and wash spring onions and arugula. Cut both into small pieces

    Mix tortellini, beans, spring onions, rocket salad, tomatoes and marinade. Leave to stand for about 2 hours. Garnish with sliced Parmesan
