Watermelon with lemon cream & fruit salad

Have you ever had watermelon pizza? We spread the melon slices with a lemon curd cream and instead of salami and co. there are's berries and mango!

Ingredients

Servings: 6
  • 250 g Strawberries
  • 150 g Raspberries
  • 150 g Blueberries
  • 1 small mango
  • 6 TABLESPOONS Licor 43 (Spanish spice liqueur)
  • 500 g cream quark (40 % fat)
  • 1 Lemon
  • 4 TABLESPOONS Sugar
  • 200 g Whipped cream
  • 1 pck. Vanilla sugar
  • 3 Stem/s Mint
  • 1 small seedless watermelon

Directions

    Wash, clean and halve the strawberries. Select the raspberries and blueberries, wash if necessary, and drain. Peel mango, remove flesh from stone and cut into slices. Mix all fruits with liqueur, chill.

    Mix the quark, lemon juice and sugar. Whip cream and vanilla sugar until stiff, fold into the quark cream.

    Wash mint, shake dry and pluck off leaves. Cut the melon into 6 slices and remove the seeds if necessary (use the melon leftovers for other purposes). Place the melon slices on plates. Spread curd cream on top. Add the fruits with the marinade and sprinkle with mint.

    If it still gets really warm in the summer evenings, put the melon in the refrigerator a few hours before. Then the dessert is wonderfully refreshing.
