Watercress salad with chicken strips

Ingredients

Servings: 4
  • 2 Chicken filets
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 2 TABLESPOONS Oil
  • 1 Lemon
  • 1 Avocado
  • 1 green-skinned apple
  • 150 g Watercress
  • 1 Garlic clove
  • 150 g Natural yoghurt
  • 1 TABLESPOON Honey
  • 50 g Walnut kernels

Directions

    Wash the meat, dab dry and marinate with salt, pepper, paprika and oil. Heat the grill pan and fry the meat in it for approx. 3 minutes on each side

    Halve the lemon, squeeze the juice. Halve avocado and remove core. Remove the flesh from the skin and cut into slices. Sprinkle with 2 tablespoons lemon juice. Wash and quarter the apple and remove the core. Cut quarter into slices and sprinkle with lemon juice. Wash the watercress, shake dry, pluck the leaves from the stalks and place in a salad bowl

    Peel the garlic and press it through a garlic press. Mix yoghurt, 2 tablespoons lemon juice and garlic. Season to taste with salt, pepper and honey. Pluck chicken fillets into strips with two forks. Chop walnuts roughly

    Mix avocado, apple and watercress. Serve with chicken strips and sprinkle with walnuts. Sprinkle with dressing
