Waldorf salad with pomegranate

Ingredients

  • 7-10 Tbsp Ingredients for 6 people:
  • 4 TABLESPOONS Mayonnaise
  • 2 TABLESPOONS apple juice
  • 1 TEASPOON liquid honey
  • 100 g Whipped cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 500 g Celeriac
  • 2 TABLESPOONS Lemon juice
  • 3 sour apples (e.g. Elstar)
  • 100 g Walnut kernels
  • 1 Pomegranate
  • 200 g Lamb's lettuce

Directions

    For the salad dressing mix mayonnaise, apple juice and honey. Whip cream until semi-stiff and fold in. Season to taste with salt and pepper

    Peel and wash the celery and slice or cut it into fine sticks. Mix immediately with lemon juice. Wash, quarter and core the apples and also slice or cut them into fine sticks

    Mix immediately with the celery and fold into the mayonnaise. Cover and leave to stand for approx. 1 hour

    Roast the walnuts in a dry pan for about 2 minutes. Remove and chop roughly. Halve the pomegranate, break into large pieces and remove the seeds. Clean, wash and spin dry the lamb's lettuce. Season Waldorf salad to taste again. Lamb's lettuce loose
