Vegetarian Halloumi vegetable skewers

Ingredients

  • 4 Stem(s) Thyme
  • 2 Onions
  • 1/2 red and green peppers (approx. 150 g each)
  • 3 TABLESPOONS Olive oil
  • 1 chili pepper
  • 100 g Ketchup
  • 7-10 Tbsp Salt
  • 100 g Mushrooms
  • 1 (approx. 150 g) Aubergine
  • 1 yellow and green courgettes (approx. 200 g each)
  • 2 packages (250 g each) Halloumi Grill Cheese
  • 7-10 Tbsp Thyme and mini peppers
  • 12 wooden skewers

Directions

    Wash the thyme, dab dry, pluck leaves from the stalks and chop. Peel and chop 1 onion. Clean, wash and finely dice the bell peppers. Heat 1 tablespoon of oil. Sauté onion and bell pepper for about 5 minutes.

    Wash the chilli, remove seeds, dice and add to the vegetables. Deglaze with 50 ml water. Add ketchup. Season with salt and thyme. Clean the mushrooms and clean them. Peel 1 onion and cut into slices.

    Clean the aubergine and zucchini and cut into pieces. Cut Halloumi into cubes. Put vegetables and cheese alternately on wooden skewers and season with salt. Heat 1 tablespoon of oil in a large pan.

    Fry 6 skewers over medium heat for 8-10 minutes while turning, remove. Heat 1 tablespoon of oil in the pan. Fry another 6 skewers in the same way. Arrange skewers with sauce on plates and garnish with thyme and paprika.
