Onions peel and chop finely. Heat 2 tablespoons of oil in a pot. Fry half of the onions in it until transparent. Add unripe spelt grain and stock, bring to the boil and simmer for about 10 minutes at low heat. Stir from time to time. Clean the cabbage, put into boiling water and remove 8 leaves.
Halve the cabbage (use one half of the cabbage for other purposes). Cut the rest finely. Wash the parsley and chop except for a little bit for garnishing. Chop the parsley, except for a little bit for garnishing, and add the cabbage to the green spelt. Season with salt and pepper. Dab cabbage leaves dry. Spread the green spelt mixture on the cabbage leaves and roll up. Fix with wooden skewers. Heat 2 tablespoons of oil in a frying pan. Brown the cabbage rolls in it all around and cook them at medium heat for about 10 minutes. Remove and keep warm. Add the rest of the onions and tomatoes with the liquid to the pan.

Brown the cabbage rolls in it all around and cook them at medium heat for about 10 minutes. Remove and keep warm. Add the rest of the onions and tomatoes with the liquid to the pan. Chop the tomatoes slightly, bring to the boil and simmer for about 5 minutes. Season with salt and pepper. Put part of the tomato sauce on a plate. Arrange roulades on top. Sprinkle with parsley strips. Add the rest of the sauce garnished with parsley
