Wash the rosemary, shake dry and chop the needles roughly. Peel the onions and cut them into thin slices. Wash the sage, shake dry and pluck the leaves. Peel garlic and cut into slices. Put cheese, herbs, garlic, olive oil and onions in a bowl, cover and marinate for about 2 hours
Dab the peppers dry and cut them roughly into pieces. Clean the rocket, wash and shake dry. Heat a coated pan. Remove the cheese from the marinade and fry on both sides in the hot pan for 2-3 minutes. Shortly before the end of the cooking time, add onions, garlic and herbs to the pan and fry briefly. Remove Halloumi from the pan
Halve the burger buns. Spread the cut surfaces with 1 tsp. pesto each. Cover the lower halves with paprika first, then place the cheese on top. Spread rocket and onion slices on top and finish with the top of the bun. Serve immediately
