Ingredients

Servings: 4
  • 2 Onions
  • 400 g Potatoes
  • 300 g Carrots
  • 500 g Turnip
  • 7-10 Tbsp Salt
  • 1 TEASPOON colourful peppercorns
  • 3 sour apples (about 150 g each)
  • 75 g streaky smoked bacon
  • 200 ml Milk
  • 1/2 Pot of chervil

Directions

    Onions peel and quarter. Peel and wash potatoes, carrots and turnip. Then cut into large pieces. Put everything in plenty of boiling salted water. Season with crushed pepper.

    Cover and cook for about 30 minutes. Meanwhile wash the apples. Cut 2 pieces into quarters, cut out the core. Dice the fruit flesh and add to the vegetables for 10 minutes. Cut the remaining apple into slices. Finely dice the bacon.

    In a frying pan, leave it crispy. Turn apple slices briefly in the bacon fat. Drain the vegetable water. Add milk. Mash vegetables lightly. Serve with apple slices and bacon. Pluck off the chervil leaves, sprinkle on top and serve.
