Vegetable couscous with chicken filet

Ingredients

Servings: 2
  • 150 g Cutting beans
  • 7-10 Tbsp Salt
  • 1 Onion
  • 1 Garlic clove
  • 150 g Courgette
  • 200 g Tomatoes
  • 2 Chicken fillets (approx. 125 g each)
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp black pepper
  • 2 stem(s) Thyme
  • 20 g Raisins
  • 125 g Couscous
  • 7-10 Tbsp Curry
  • 7-10 Tbsp ground cilantro
  • 200 ml Vegetable broth (instant)
  • 100 g Whole milk yoghurt
  • 7-10 Tbsp Mint and thyme

Directions

    Clean, wash and cut the beans into small pieces. Put them into boiling salted water, cook for about 8 minutes, pour into a sieve and drain. In the meantime peel and finely dice the onion. Peel garlic and chop finely. Clean, wash and slice the zucchini. Clean, wash and slice the tomatoes.

    Wash the meat and dab dry. Heat 1 tablespoon of oil. Fry the meat for 10-12 minutes, turning it, and season with salt and pepper. Wash thyme, dab dry and pluck the leaves from the stalks. Heat 1 tablespoon of oil in a saucepan and sauté the onion and garlic. Add the zucchini, tomatoes, beans and raisins and fry. Add couscous, sauté, dust with curry and coriander and deglaze with broth. Bring to the boil, remove from the heat and allow to swell for about 2 minutes. Then let it simmer again at medium heat for about 4 minutes. Season with salt and pepper. Remove meat from the pan and cut open.

    Add the zucchini, tomatoes, beans and raisins and fry. Add couscous, sauté, dust with curry and coriander and deglaze with broth. Bring to the boil, remove from the heat and allow to swell for about 2 minutes. Then let it simmer again at medium heat for about 4 minutes. Season with salt and pepper. Remove meat from the pan and cut open. Serve vegetables, couscous and meat on plates with a blob of yoghurt. Garnish with mint and thyme as desired
