Ingredients

  • 500 g Flour
  • 1 cube (42 g) fresh yeast
  • 1 TEASPOON Sugar
  • 250 ml + 7 Tbsp Öl
  • 7-10 Tbsp Salt
  • 200 g Spinach
  • 200 g Tomatoes
  • 1 (approx. 250 g) green pepper
  • 2 Leek sticks (leek)
  • 6 Garlic cloves
  • 1 collar flat leaf parsley
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Lemon juice
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Grease

Directions

    Sieve the flour into a mixing bowl, press a depression in the middle. Crumble yeast into it, sprinkle sugar over it. Pour 100 ml of lukewarm water into the hollow and add some flour from the edge, mix with a fork to a pre-dough. Cover and leave to rise in a warm place for about 20 minutes. Then add 250 ml oil and salt and knead with the dough hooks of the hand mixer to a smooth dough. Cover the dough and leave to rise in a warm place for another 30 minutes.

    In the meantime clean and wash the spinach. Pour into 150 ml boiling salted water, let it collapse and put it into a sieve. Drain and squeeze. Clean, wash, quarter, seed and finely dice the tomatoes. Clean, wash and cut the peppers into fine strips. Leek clean, wash and cut into fine rings. Peel garlic and chop finely. Wash parsley, shake dry and chop. Heat 5 tablespoons of oil in a large frying pan, add all the vegetables and fry for about 3 minutes while turning. Season with salt, pepper and lemon juice. Add the parsley and set aside. Knead the yeast dough again with floured hands.

If necessary, pull the dough apart a little more with your hands until the baking tray is covered. Spread the vegetables on the dough. Drizzle with 2 tablespoons of oil. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 40 minutes. Remove from the oven, cut into pieces and serve. Ham tastes good with it
