Vanilla wafers with cherry jelly and yoghurt (diabetics)

Ingredients

  • 1 glass (370 ml) Cherries (suitable for diabetics)
  • 7-10 Tbsp vegetable binder
  • 7-10 Tbsp liquid sweetener
  • 2 Eggs (size M)
  • 50 g soft butter or margarine
  • 12 g Diabetic Sweetness
  • 1 pinch Salt
  • 7-10 Tbsp pulp of 1/2 vanilla pod
  • 75 g Flour
  • 1 TABLESPOON Oil
  • 50 g Whole milk yoghurt
  • 7-10 Tbsp Mint

Directions

    Boil up the cherries in their juice, bind with vegetable binding agent. Season to taste with sweetener if necessary. Separate eggs. Melt the fat and let it cool down a little. Stir egg yolk, diabetic sweetness, salt and vanilla pulp until creamy.

    Stir in liquid fat. Sift the flour over it and fold in. Beat the egg white until stiff and fold into the egg mixture. Preheat waffle iron. Coat the upper and lower baking surfaces with a little oil. Bake 3 waffles from the dough one after the other until golden brown. Take them out and let them cool down. Stir yoghurt and a few drops of sweetener until smooth. Serve the waffles with cherry jelly and yoghurt.
