Vanilla ice cream on amaretto plums

Ingredients

Servings: 4
  • 500 g Plums / damsons
  • 2 tablespoons (20 g) Cornstarch
  • 1/4 l Plum juice
  • 3 TABLESPOONS Sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 3 TABLESPOONS Lemon juice
  • 2 TABLESPOONS Amaretto liqueur
  • 1 TABLESPOON flaked almonds
  • 2-3 TABLESPOONS Amarettini (Italian almond biscuits)
  • 4 scoops of vanilla ice cream (approx. 50 g each)

Directions

    Wash and stone the plums. Stir starch and 4 tablespoons of water until smooth. Boil up plum juice or 1/4 l water, 3 tbsp sugar, lemon peel, lemon juice and plums. Stir in the starch and simmer for about 1 minute. Let it cool down. Stir in liqueur

    Roast the almonds until golden brown. Take out immediately. Coarsely crumble the Amarettini. Distribute plums in 4 glass bowls. Put ice on top. Sprinkle with Amarettini and almonds

    A few drops of bitter almond aroma also give the compote an almond note - completely without alcohol! The Amaretto plums can be combined just as well with almond, hazelnut or marzipan ice cream

    Dip the ice cream scoop/spoon into hot water before tapping the balls
