Vanilla cod tartar

Ingredients

Servings: 4
  • 1 Shallot
  • 1/2 Vanilla pod
  • 7-10 Tbsp juice of 1/2 lemon
  • 200 g Cod fillet (sushi quality)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 green and black olives without stone
  • 6 Stem(s) Coriander
  • 3 stalks of chives
  • 3 red and yellow cherry tomatoes
  • 2 TABLESPOONS Olive oil

Directions

    Peel and finely dice the shallot. Cut the vanilla pod lengthwise, scrape out the pulp with the back of a knife. Mix the pulp with lemon juice and shallot. Wash the fish, dab dry and cut into small cubes. Mix with the vanilla marinade, season with salt and pepper. Cover and chill for about 15 minutes

    Meanwhile cut the olives in half. Wash the herbs and shake dry. Cut the leaves of 4 coriander stems into small pieces. Cut chives into small rolls. Wash and quarter tomatoes. Add olives, tomatoes and herbs to the fish, drizzle with oil and mix. Season to taste and pour into small glasses. Garnish with coriander
