Drain the pineapple, collect the juice. Mix soy sauce, 3 tablespoons pineapple juice and honey, season to taste. Cut turkey breast into cubes, marinate in the marinade and leave to stand for at least 30 minutes. In the meantime, cut pineapple rings, except for 2, into 6 pieces each. Roll up bacon. Drain meat a little and put it on 12 skewers, alternating with pineapple and bacon rolls.
Brush a fat pan of the oven with oil and place the skewers on top of each other. Drizzle with oil and bake in the preheated oven (electric: 200 °C/ gas: level 3) for about 20 minutes. After half of the time, turn the skewers once. Arrange the finished skewers with the remaining pineapple rings, lettuce leaf and lemon balm on a plate. Serve with a colourful salad
