Chop the olives finely, except for 4 pieces. Mix with cream cheese. Spread on the turkey breast slices, roll up firmly and chill. Clean and wash the frisée salad and pluck into bite-sized pieces. Wash and halve the tomatoes.
Mix vinegar and oil. Season with salt and pepper. Mix salad, tomatoes and marinade and arrange on small plates. Cut turkey rolls into 8 small pieces and place 1/2 olive on each with a wooden skewer
