Turkey medallions on vegetable noodles

Ingredients

Servings: 4
  • 150 g Spinach
  • 1 small onion
  • 2 TABLESPOONS Butter or margarine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp grated nutmeg
  • 2 medium-sized carrots
  • 250 g white ribbon noodles (fettuccine)
  • 1 collar Chives
  • 400 g Turkey filet
  • 2 TABLESPOONS Oil
  • 1 Garlic clove
  • 50 g medieval Gouda cheese

Directions

    Wash, sort and drain the spinach. Peel and chop the onion. Heat 1 tablespoon of fat. Fry the onion until transparent. Add spinach and fry. Season with salt and nutmeg. Peel and wash the carrots and cut into fine strips.

    Cook the pasta in salted water for 6-8 minutes. Add carrots after about 3 minutes. Wash the chives. Wash the meat, dab dry and cut into 4 medallions. Heat oil in a pan. Fry the meat on each side for about 5 minutes.

    Season with salt and pepper. Spread the spinach on top. Drain the pasta. Peel garlic and chop finely. Heat 1 tablespoon of fat and fry garlic in it. Add noodles and chives and toss.

    Place the pasta in an ovenproof dish. Place the meat on top. Grate the cheese and sprinkle over it. Bake in a preheated oven (electric: 200 °C/ gas: level 3) for approx. 10 minutes.
