Turkey escalope with rice and Asian vegetables (diabetics)

Ingredients

  • 40 g Long grain rice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 (20 g) cleaned spring onion
  • 1 (100 g) peeled carrot
  • 1/2 (100 g) cleaned red pepper
  • 50 g cleaned zucchini
  • 1 (approx. 100 g) Turkey escalope
  • 1 tsp (5 g) Oil
  • 20 g sorted mung bean seedlings
  • 1-2 TEASPOONS Soy sauce
  • 1 knife tip Curry

Directions

    Soak the rice in about 1/8 litre salt water for 18-20 minutes. Wash the vegetables. Cut spring onion into rings, carrot and bell pepper into sticks, zucchini into half slices. Wash meat and dab dry. Heat oil in a coated pan. Fry the meat for 4-5 minutes on each side. Season with salt and pepper.

    Take out. Stir-fry vegetables in the frying fat for 2-3 minutes. Fry the sprouts only briefly. Add soy sauce. Season to taste with salt, pepper and curry. Arrange everything
